On our recent trip to New England we visited our "DC kids"! My Daughter-in-law made the most amazing Pico de Gallo which she simply calls "Pico"... It was hot & delicious. So with all the tomatoes I had left in the garden, some beautiful peppers and cilantro given to me and a fresh picked onion from the garden...
I proceeded to make "Pico"! Instead of chopping everything by hand like her, I brought out the cuisinart and got to work... First I chopped the onion, cilantro and jalapeno; these I like chopped a bit more than everything else...
After emptying that into a bowl I chopped red, yellow and green peppers...
Then cut the tomatoes into chunks and they went into the bowl...
This all went into a very large bowl followed by chopped avocado (which I did by hand) with two fresh squeezed limes...
After mixing it all together it looked like this:
A very large bowl of "not to hot" "Pico"... I think I got the recipe right, it was delicious!
Just wanted to add that I will by trying "Kooky Girl's" recipe for Green Tomato Chutney for all the green tomatoes left on the vine! Her recipe calls for some amazing spices!
