It wasn't that long ago when I was wondering if the tomatoes in my garden would ever ripen. Now here it is the middle of October and I've just picked a large bowl of tomatoes... Some of them are not the best looking... but they are delicious!
Especially with eggs...
I simply put a bit of olive oil in a pan, slice a tomato and put in med-hot pan, add egg; while that is cooking I toast "Dave's Killer Blues Bread" and last I layer tomatoes, egg on toast and sprinkle with a bit of feta cheese...
Colorful... Healthy... and Yummy!
How are you using up your last bit of tomatoes?
I need a few ideas as I still have more tomatoes in the garden...
