Pence NW - Another Tenant Improvement

Pence NW has an awesome project going on in Salem... I'm not going to tell you what this Tenant Improvement Project is but I will say we are moving along at quite an excelerated pace! If you're into the finishes and not the bones you're probably going to be bored with this post so I've tried to keep it interesting by creating mosaics...

Inspections are complete for the week and all these walls will be filled with insulation and soundproofing material. Our guys have done a terrific job working together to make sure the job is kept clean during the process.

In a few days this space will be sheetrocked and painted... that's when the design kicks in and I will get to show off what I've been working on.

Knitting....

While some are busy scrapping, sewing, crafting... I've been busy knitting...

Remember this little sweater which took a very long time to finish? Well I started this just two weeks ago and when I'm finished with the hat I'll show you the set! Hopefully with better lighting because the color is fabulous!

I love the way this 100% Organic Cotton feels and need to check out the other colors at my favorite yarn store: Teaselwick Wools... which by the way is now open till 8 on Wednesday's for knitting, visiting & shopping... I think I'll be posting the finish of this sweater and possibly a new project later this week!

Sunday Creative October 24 - 30

Madeline Bea choose the word "Dynamic" for Sunday Creative this week. With so many things being "Dynamic" people... nature... things...  it was a challenge deciding what to share.

Traveling from Bar Harbor to Portland we crossed this impressive bridge... 

for me it's the strong lines which make it "Dynamic"...

Quite a contrast from the old bridge...

Which I'm sure was quite "Dynamic" in its day!

Baking Bread

On a rainy afternoon there's nothing better than the smell of baked bread... 

Unless it's bread baking with Rosemary & Thyme on top...

I've been making all kinds of bread from this cookbook... 

Recipes easy to follow, require little effort and almost no time except for what is spent letting it rise & bake!

Breakfast with Tuesday!

It's been awhile since Tuesday and I have had a date for breakfast, but after a night with little sleep her Mama was more than willing to have Grandma take her out. In fact Amber had her dressed, coat on and ready by the door when I came to pick her up...

First she needed a bit of salt on the eggs... just kidding Mama, Grandma would never let her have that!

I really did try to get her to use a fork...

But fingers worked best...

She used a straw for drinking...

And let me know when she was finished!

Nothing's quite as fun as sharing pancakes with Tuesday!

"Outdoor Wednesday"!

Reminiscing about our New England trip this beautiful fall morning I thought it appropriate to share a few of our photos for "Outdoor Wednesday". So not at all wordy today just a bit of the outdoors!

I want to go back soon!

Using up the Tomatoes & "Pico"

On our recent trip to New England we visited our "DC kids"! My Daughter-in-law made the most amazing Pico de Gallo which she simply calls "Pico"... It was hot & delicious.  So with all the tomatoes I had left in the garden, some beautiful peppers and cilantro given to me and a fresh picked onion from the garden...

I proceeded to make "Pico"! Instead of chopping everything by hand like her, I brought out the cuisinart and got to work... First I chopped the onion, cilantro and jalapeno; these I like chopped a bit more than everything else...

After emptying that into a bowl I chopped red, yellow and green peppers...

Then cut the tomatoes into chunks and they went into the bowl...

This all went into a very large bowl followed by chopped avocado (which I did by hand) with two fresh squeezed limes...

After mixing it all together it looked like this:

A very large bowl of "not to hot" "Pico"... I think I got the recipe right, it was delicious! 

Just wanted to add that I will by trying "Kooky Girl's" recipe for Green Tomato Chutney for all the green tomatoes left on the vine! Her recipe calls for some amazing spices!

Supporting an Athlete!

We all have strengths and being athletic has "never" been mine! I'm good at a lot of things but when it comes to competing... I'd rather be a supporter, it beats coming in last!

So today I was an awesome supporter... I got up at the crack of dawn on a Sunday morning, headed down to Philomath and stood outside in the freezing cold and waited for my honey to compete in the "Beaver Fever Duathlon".  

The day was actually perfect for the event; however not everyone received the weather report of < 40 degrees before heading out...

The start of the race is pretty intense as runners position themselves...

My honey doesn't mind being back a bit... he will pass most of the runners before it is over...

Twenty minutes later and he's back getting ready for the bike leg...

And off he goes...

He's back and heading out for another run... What a stud!

One Hour Forty Minutes... Done!

Way to go honey!

And I must confess I had an awesome time too; I met an amazing woman from Bend. We chatted the whole time like we had been friends forever... We had so much in common! A great sunny day for everyone!

Color of Fall...

Enjoying the rich, vibrant colors of fall in the garden...

Don't you just love the change of the seasons? I know I do!

Tomato & Eggs...

It wasn't that long ago when I was wondering if the tomatoes in my garden would ever ripen. Now here it is the middle of October and I've just picked a large bowl of tomatoes... Some of them are not the best looking... but they are delicious!

Especially with eggs... 

I simply put a bit of olive oil in a pan, slice a tomato and put in med-hot pan, add egg; while that is cooking I toast "Dave's Killer Blues Bread" and last I layer tomatoes, egg on toast and sprinkle with a bit of feta cheese...

Colorful... Healthy... and Yummy!
