I have quite a few cookbooks which I use for inspiration... but it's alway fun to put a spin on any recipe, if nothing else it makes it "your own". Such is the Tuscan White Bean Salad with Spinach Olives and Sun-Dried Tomatoes out of Foster's Market Cookbook.
By adding Pasta, peppercini, celery, fresh parsley, green & red peppers... it's delicious and I enough to serve a crowd! Serving this with Rosemary Flatbread from Cascade Bakery made a perfectly light summer meal!
