My cravings tonight were for something fresh & flavorful. I really had no idea how I would be preparing the Halibut I bought for dinner tonight until I laid it out on a sheet of foil. Thinking I had a bit of rub to sprinkle on it I first topped it with a bit of "brown sugar"... but no rub... so improvising and being a bit creative I sprinkled it with coriander, cumin, & chili powder. Next I added a clove of garlic & about an inch of fresh ginger, red & green peppers and added a bit of salt & pepper. Lastly I squeezed an entire lime on top, and tossed the halves on top.
We closed up the foil and put it on the grill for 20 minutes, placed a few slices of pineapple along side and grilled. After opening the foil the aroma of an amazing meal filled the air:
We served this halibut & pineapple with fresh grilled zucchini, beans from the garden over a bit of rice:
A perfect summer meal bursting with "color & flavor"! We ate slowly to savor every bite! Perfection!
