This is one of those meals that just makes you feel good! A simple colorful meal!
Saute your chopped onions in olive oil in a large pan. Add chopped carrots & potatoes to onions and add chicken broth. Cook until vegetables are almost tender and add cooked chicken. The whole chicken I cooked earlier was added to three different meals. You can then add peas, peppers or any other veggies you have in fridge or freezer.
Head out to your garden to pick a bit of fresh thyme and pick the tender leaves off and add to the mixture.
You can top this with homemade crust or Foster Farms Herb Biscuits. Bake 30 minutes @ 350.
Sorry to say the day got so hectic I didn't take a picture of the final result! I topped with the Cheese / Herb biscuits and trust me it was Fabulous!
