If you've been reading my blog this past week you might remember Garden Greens & Color and the wonderful produce bought at Saturday Market and the produce from eatlocalonline.com. Well there was plenty still left in the fridge and I hate to see such goodness go to waste. Before leaving for work this AM I decided to start a wonderful soup base!
I started by sautéing leeks, carrots, ginger & garlic in a bit of olive oil.
Added a couple of cans of chicken broth. Simmered a bit and put in the fridge until getting home from work. I didn't know what I would be making this evening but I knew it would have an Asian flair.
This is what we ended up with... Delicious! I added leftover chicken breast and fresh kale. Served it over rice and topped with Thai Chili Sauce. All that Color just screams... It's got to be good for you!
